Lentil and Pumpkin Soup

 

 

 

 

 

 

This is an easy and tasty recipe for the whole family to enjoy while it is still abit cooler at night. Very hearty soup so will fill you up and keep you full for hours.

Ingredients (Serves 7- 8 people)

  • 1 Chopped Onion
  • 1 Clove of garlic
  • 400-500g of clean diced pumpkin
  • ½ cup dry red lentils
  • 1 litre of vegetable stock or water
  • Pinch of salt and pepper if you desire
  • 1 tsp olive oil

How to cook:

  • Fry the chopped onion in the olive oil until onion is glassy
  • Add the diced pumpkin and ½ cup of lentils
  • Add 1 litre of vegetable stock and simmer for about 20-25 minutes until the pumpkin and lentils cooked.
  • Season and process the soup. You might need to adjust the liquid, adding more water if the consistency is too thick.

Tips for different flavour

You can adjust the flavour slightly by adding a small piece of ginger with the onion and garlic.

You can blend it or leave it chunky depending on your preference in texture.
