Easy Mini Quiches

Ingredients:

  • 4 free-range eggs or 6-8 egg whites
  • ½ cup milk (Almond milk or full cream)
  • ½ x 250g pack frozen spinach, thawed, excess water removed
  • 100g shaved ham, chopped
  • ½ cup grated cheese
  • Cracked pepper

Alternative Suggestions 

You can use any vegetable, herbs and spices that you desire.

Baby spinach, broccoli, onion, mushrooms, capsicum, cauliflower, chilli, Italian or mixed herbs just to name a few.

Method:

  1. Preheat oven to 180°C
  2. Grease a 12-pan muffin tin with spray olive oil.
  3. Mix all ingredients in a medium bowl. Pour mixture evenly into muffin cups.
  4. Bake in oven for 20-30 minutes or until golden and knife inserted in centre comes out clean.
  5. Let cool and enjoy.

Quiches can be stored in a sealed plastic container in the fridge for up to 3 days. Great to eat cold or heated up. Also good for when you are on the run. Have for breakfast or a snack.
